Position Summary: We have an exciting opportunity to join our team as a Tray and Assembly Supervisor.
In this role, the successful candidate will be responsible for coordinating efficient work distribution of tray assembly nourishment. Insures accurate assembly of patients trays.
Evaluates discipline and makes recommendations regarding hiring of employees to manager.
Establishes and attends meetings and in-services for the tray assembly employees. Trains new staff effectively, instructs them in their position responsibilities and the policies and procedures of the tray assembly. Attends meetings, and in-services within NYULMC and outside of the medical center ongoing. Stays current on trends and changing standards in food service.
Completes all required documentation for the area. Monitors sick call, supervisors daily reports, production requirements, and maintain temperature log. Orders daily food items by storeroom requisition. Completes a daily trayline report in logbook of shortages, or any changes regarding area. Documents repairs of equipment and outcomes. Completes reports on a timely basis. Assures refrigeration, pot and dish washing, and that all food temperatures are accurate. Accurately takes inventory and order daily supply.
Effectively supervises and assigned employees to work stations and daily duties. Provides needed coverage of work area while maintaining authorized staffing levels and position control. Explains assigned tasks to employees clearly. Monitors the work of staff to insure that they are carrying out their assignments correctly. Brings to the employee's attention areas of performance needing improvement as soon as they are recognized with a plan and time frame for correction. Documents employee's performance on an ongoing basis. Evaluates the performance of each employee upon completion of the probationary period and thereafter on an annual basis in accordance with personnel policies and procedures.
Maintains authorized staffing level and controls all overtime, and cost containment measures. Monitors schedule for accurate usage of employees. Arranges work to reduce or avoid overtime. Uses supplies efficiently. Evaluates practices and identifies area of excessive material and or labor costs. Monitors supplies and orders efficiently to control cost.
Assures prompt retherm and tray delivery of patient meals to patients. Sees that diet changes received by the therapeutic center are made on the truck before retherm or before floor delivery. Assures daily that breakfast carts are checked, stocked, and rotated. Assures that hot beverages, bananas, hot entrees, kosher products, and children specialties are added prior to truck leaving area. Assures that misograms are filled and sent promptly. Oversees that the retherm employees check all trays for temperature and missing items. Assures that completed trucks leave retherm area promptly for patient areas.
Assures accurate, timely assembly of patients' trays. Assures that trayline begins at the scheduled time for all meals and food trucks are placed appropriately for the retherming cycle. Maintains an efficient and expedient flow of trays during each meal period to establish a speed of 3.5 trays per minute. Assures that the retherm system is operable and systematic reporting of problems. Maintains serving utensils for portion control and adherence to a therapeutic diet. Maintains food left over for proper refrigeration and storage, used for the next meal, or sent to cafeteria.
Maintains high quality sanitation, compliant with department and JCAHO standards. Assures that floors and other surfaces and equipment remain clean and presentable, and that garbage is removed and dumped frequently to avoid buildup. Assures that garbage pails are clean and covered, soap dispensers are filled, and hand towels are available. Sees that equipment and surfaces are cleaned using the proper cleaning compounds and procedures to assure a safe food service department. Assures frequent employee hand washing and use of gloves, hair covering, and adherence to the dress code. Inspects serving utensils for proper portion control prior to and during each meal service. Insures that floors, equipment and repairs are maintained within the guideline of NYS and JCAHO for food service.
To qualify you must have a High School Diploma or the equivalent. 90-hour course in food service management. Effective oral, written, communication and interpersonal skills
Bachelor's Degree in Food and/or Nutrition or a related field. Minimum of two years of experience in a related supervisory capacity
Qualified candidates must be able to effectively communicate with all levels of the organization.
